Ingredients for 4 servings:
- 1 jar Matjes fillet(s) , (750 ml) with onions and liquid
- 3 m.-sized potatoes, cooked the day before
- 1 apple
- 3 m.-large cucumber(s), (pickles)
- 1 cup sour cream
- 2 eggs, hard boiled
- 1 bell pepper(s), green
- 1 bell pepper(s), red
- 1 small can of corn kernels
- salt and pepper
- Sugar
- oil
- Vinegar
Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes
Chop everything into small cubes, mix, and season with salt and pepper. Let it sit for 1-2 hours. Then line a plate with green lettuce leaves that have been marinated in a mixture of oil, vinegar, water, salt, and sugar. Arrange the herring salad on top.
