Potato crumb cake

Ingredients for 1 servings:

  • 150 g potatoes, cooked, peeled and mashed
  • 250 g flour
  • 2 tsp, crushed cream of tartar
  • 50 g breadcrumbs
  • 125 g sugar
  • 1 sachet of vanilla sugar or lemon sugar
  • 1 pinch of salt
  • 1 pinch(s) cinnamon powder
  • 1 large egg(s)
  • 50 g butter
  • 500 g apples, peeled and grated
  • 50 g almonds, chopped

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes

Combine the flour, cream of tartar, breadcrumbs, sugar, salt, and cinnamon and mix thoroughly with the mashed potatoes. Stir in the whole egg and the melted, slightly cooled butter. Using a dough hook, mash the batter into crumbs. Pour half of the crumbs into a 26cm cake tin and scatter the peeled, grated apples and almonds over the top. Sprinkle the remaining crumbs over the cake. Bake the cake at 175°C (top/bottom heat) for about 30 minutes. Do the toothpick test.
