Ingredients for 1 servings:
- 180 g butter
- 250 g sugar
- 2 eggs
- 300 g wheat flour
- 1 ½ tsp baking powder
- 2 packets of vanilla sugar
- 250 g applesauce
- 2 apples (e.g. Boskoop)
- 100 g potato flour
- Cinnamon
- lemon juice

Sweet memory of my Finland vacation
Cream the softened butter with sugar, vanilla sugar, and eggs until fluffy. Combine the wheat flour and baking powder and stir in. Grease a tart or pierogi pan (approx. 30 cm in diameter) and pour 2/3 of the dough into the pan. Peel and core the apples, cut them into 2-3 cm pieces, and drizzle with a little lemon juice, if desired. Mix the applesauce with the potato flour and mix well. Add cinnamon to taste and the apple pieces, and mix everything together. Spread the mixture over the dough. Spread the remaining third of the dough over the mixture and bake the cake at 200°C in a fan-assisted oven for 20-25 minutes. The strudel should have a beautiful golden brown color. It’s best served while still warm, with vanilla sauce or vanilla ice cream. And here’s the story behind this delicious recipe: I had fulfilled my dream of spending my summer vacation in Finland. I rented a vacation home near Kuopio for about two weeks. The landlady baked an apple strudel for each new host family and provided a packet of vanilla sauce. I was so enthusiastic about the recipe that I had it translated and received it via email from Finland a few weeks later. And now I wish you lots of fun and success baking it!
