Ingredients for 6 servings:

  • 6 m.-sized potatoes
  • 5 eggs
  • 1 large onion(s)
  • ½ sausage, poultry sausage (half of the large ones)
  • 1 can peas and carrots
  • 1 jar mayonnaise (maybe 1 1/2)
  • ½ jar cucumber(s)
  • 1 tbsp salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Peel the potatoes, slice them, and cook until al dente. Hard-boil the eggs. Meanwhile, dice the onion, cucumber, and sausage and place them in a large bowl. Drain the peas and carrots and add them to the bowl. Peel the eggs, dice them, and add them to the bowl. Add the cooled potatoes, mix everything with the mayo, and season. Let it sit in the fridge for 1-2 hours (stir in a little more mayo if desired).
