Pork strips with mustard and herbs

Ingredients for 4 servings:

  • 1 pork fillet(s) (approx. 400 g)
  • 1 bunch of spring onions
  • 2 tbsp oil, neutral
  • 2 tbsp mustard (Dijon)
  • 150 ml cream or Cremefine
  • 150 ml water or chicken stock
  • a few sprigs of sage, finely chopped
  • 1 handful of parsley
  • 1 handful of garlic chives or alternatively 1/2 garlic clove
  • Salt and pepper (freshly ground and plenty)
  • 3 drops of Tabasco
  • possibly garlic

Working time approx. 20 minutes; Total time approx. 20 minutes

quick, spicy, delicious

Remove all skin and tendons from the pork fillet and cut into strips. Heat the oil and sear the meat. Add the spring onions, cut into 2 cm pieces, and sear. Add the mustard and sage strips and sear. Deglaze with cream and water (or stock, if desired). Simmer for a few minutes until the pork fillet strips are just cooked through (this should take no longer than 8 minutes). Season with salt, pepper, garlic if desired, and Tabasco. Finely chop the remaining herbs and add them, let them simmer for a while, season to taste, and serve with the spaetzle. The amount of sage can be varied depending on your experience with sage; I use about a handful. You can also start with less sage and get used to the flavor. For the remaining herbs, you can also use just parsley; that also tastes very good.
