Ingredients for 6 servings:
- 2 liters of chicken stock
- 1 liter vegetable broth
- 1 chicken (soup chicken), approx. 1 – 1.5 kg
- ½ bunch celery
- 1 bunch parsley, flat
- 500 g carrot(s)
- 1 large leek(s)
- 2 carnations
- 3 bay leaves
- 15 peppercorns, black
- Vegetables as desired, e.g. carrots, cauliflower, Brussels sprouts, peas, sugar snap peas

Place the washed chicken in a pot with the chicken stock, vegetable broth, the cleaned and finely chopped vegetables (celery, carrots, parsley, and leeks), and the seasoning. The chicken should be covered in the liquid. Bring to a boil and cook for about 1-1.5 hours until tender. Then remove the chicken and pour the soup through a sieve. Discard the cooked vegetables. If you like, you can trim some of the fat from the broth. Then add the chopped vegetables (depending on taste, season, and availability) to the broth and cook until al dente. In the meantime, remove the chicken meat from the bones and return it to the soup in bite-sized pieces.
