Italian pasta salad with apple

Ingredients for 4 servings:

  • 125 g pasta (e.g. spaghetti)
  • 1 liter of water (boiling salt water)
  • 2 small apples
  • 3 cucumber(s) , (pickles from the jar)
  • 100 g roast pork, cooked (as cold cuts) or meat sausage
  • 1 cup crème fraîche
  • 1 tbsp tomato ketchup
  • 1 tbsp milk
  • 2 tbsp cucumber juice
  • 2 tbsp herbs, chopped

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Add the spaghetti to boiling salted water, bring to a boil, stir briefly, and cook until tender. Transfer the cooked pasta to a sieve and pour clean water over it. Peel, quarter, and core the apples. Cut the gherkins, roast pork/pork sausage, and apples into strips and toss with the pasta. Prepare the salad dressing, stir in the herbs, and toss the salad ingredients with the dressing. Let the salad marinate well, seasoning with salt if desired.
