Potato salad with sour cream

Ingredients for 3 servings:

  • 500 g jacket potatoes
  • 1 cup sour cream
  • 1 onion(s)
  • 2 tbsp herbs of your choice, fresh from the garden
  • 3 tbsp vinegar (Melfor vinegar)
  • Salt
  • pepper
  • possibly mustard, medium hot

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Made quickly

Peel and slice the potatoes, and place them in a large bowl. Peel and finely dice the onion, and add it along with the vinegar. Mix the herbs with the other ingredients and season the potato salad with salt and pepper to taste. If desired, add a tablespoon of mustard.
