Delicious peppermint tea made from fresh peppermint, also available as an iced tea

Ingredients for 4 servings:

  • 6 sprigs of peppermint, fresh
  • 1 tbsp lemon juice
  • 10 g rock sugar, brown
  • 1 liter of boiling water
  • possibly ice cubes, or alternatively frozen apple juice cubes
  • 5 slices of lemon
  • Sugar, to taste

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 1 minute; Total time approx. 21 minutes

freshly harvested from the garden

Harvest or buy about 6 sprigs of fresh peppermint. I only use the very tops or the freshest leaves. Since I have enough mint in my garden to harvest fresh every day, I can afford this waste. Place the leaves or stems in a jug, add the rock candy and lemon juice, and pour over a liter of boiling water. Let it steep for 10-12 minutes, depending on your taste. For an iced tea, leave the leaves in the jug and let the tea cool. Add the lemon slices and ice or apple juice cubes, and season with sugar, if desired. Chill well and enjoy.
