Ingredients for 6 servings:

  • 1 pkt. pudding powder, vanilla
  • 40 g sugar
  • 250 ml milk
  • 1 cup(s) coffee (espresso)
  • 250 g quark (low-fat quark)
  • 80 g sugar
  • 100 g cream
  • Rum flavor
  • 24 ladyfingers
  • 2 tbsp cocoa powder

Prepare the vanilla pudding according to the instructions, but only use 250 ml milk and 40 g sugar. This will produce a very thick pudding. Cool while stirring frequently to prevent a skin from forming. Beat the low-fat quark, sugar, and 1/4 bottle of rum baking flavoring vigorously with a hand mixer for 5 minutes. Stir in the cooled pudding a spoonful at a time. Whip the cream until stiff and carefully fold it into the quark and pudding mixture. Line a dish with 12 ladyfingers, soak them with 1/2 cup of cooled espresso, then top with half of the cream. Place 12 ladyfingers on top, soak again with the remaining espresso, top with the remaining cream, and finally dust with cocoa powder. Refrigerate for one hour.
