Ingredients for 4 servings:

  • 3 m.-sized zucchini, approx. 1 kg
  • 1 cup flour (wholemeal flour)
  • 3 eggs
  • Oil for frying

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Remove the stems from the zucchini, wash, dry, and if possible, cut lengthwise into thin slices of about 2-3 mm. Put the flour in a deep plate. Whisk the eggs, season with salt, and pepper. Heat plenty of oil in a pan. Coat the zucchini slices first in flour, then in the egg, and fry in the hot oil until golden brown on both sides. Can be served as a side dish or as a vegetarian meal with a salad and yogurt sauce or tzatziki. Note: If the slices are cut too thickly, the breading will cook faster than the zucchini. However, I made the recipe with children and cut the zucchini crosswise into finger-thick slices, and everyone still loved it. I did use plenty of oil in a deep pan, though.
