Ingredients for 16 servings:

  • 250 g kohlrabi
  • 750 g potatoes
  • 200 g grated cheese, goat cheese or medium-aged Gouda
  • 250 g quark (low-fat quark)
  • 3 large eggs
  • ¼ nutmeg, grated
  • 100 g spring onion(s), finely chopped
  • 30 g ginger, ready to cook
  • 2 tsp salt
  • 2 tbsp soy sauce or tamari
  • 200 g corn kernels +
  • 6 grains of pepper, ground
  • Olive oil or rapeseed oil

Finely grate the kohlrabi and potatoes, add all the ingredients up to the peppercorns, and mix. Fry one to two tablespoons of batter in hot oil. Place the finished fritters on kitchen rolls to absorb the cooking fat. Then everyone can top with whatever they like, for example, fresh applesauce, whole cane sugar, sugar beet syrup, or even plain. Fresh mayo is also delicious. It’s easy to digest both hot and cold.
