Grilled king prawns

Ingredients for 3 servings:

  • 500 g king prawns in the shell
  • ½ lemon(s), juice
  • 3 sprigs of tarragon, finely chopped
  • 3 stalks of basil, finely chopped
  • 1 tbsp capers, finely chopped
  • 2 egg yolks, hard-boiled
  • 1 egg yolk, fresh
  • 1 tsp vinegar (white wine vinegar)
  • 1 tsp mustard, medium hot
  • 125 ml olive oil
  • salt and pepper
  • Oil for the grill grate
  • 1 lemon(s), untreated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Puree the three egg yolks with mustard and vinegar. Gradually add olive oil until a creamy sauce forms. Add the herbs and capers. Season with salt and pepper. Cut open the shells of the shrimp and remove the intestines, leaving the shells on. Drizzle the shrimp with lemon juice and season with salt. Grill over high heat for about 2 minutes on each side. Serve with the sauce and lemon wedges.
