Banana chia pancakes without flour and sugar

Ingredients for 1 servings:

  • 1 m.-sized banana(s)
  • 2 tbsp chia seeds
  • 2 m.-sized eggs
  • 1 m.-sized nectarine(s) or other fruit
  • some honey, if necessary
  • some butter or coconut oil for frying

Instructions

Working time approx. 15 minutes; Rest time approx. 7 minutes; Total time approx. 22 minutes

quick and tasty

Mash the banana with a fork. Add the eggs and chia seeds and mix everything into a batter. Refrigerate for 5-10 minutes. Meanwhile, thinly slice the nectarine or other fruit and set aside. Heat the oil in a pan and add about a tablespoon of the batter to the center. Fry on both sides until golden brown. Place the finished pancake on a plate and arrange a few slices of fruit on top. Repeat this process until all the batter is used up. If you like, you can add a little honey to sweeten it, but the pancakes taste delicious without it.
