Spelt pancakes with quark and nut cream

Ingredients for 4 servings:

  • 400 g spelt flour type 630
  • 500 ml milk
  • 6 m.-sized eggs
  • 1 pinch of salt
  • some clarified butter
  • 300 g low-fat curd cheese
  • 300 g yogurt
  • 5 tbsp almond butter
  • 5 tbsp nuts, chopped
  • 4 tbsp sugar
  • some powdered sugar for dusting

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 47 minutes

protein-rich and delicious

Using a hand mixer, combine flour, milk, eggs, and salt until smooth. Fry in batches in hot clarified butter to form pancakes. Mix the quark, yogurt, sugar, nuts, and almond butter until creamy. Spread the cream on the pancakes, roll them up, and sprinkle with powdered sugar.
