Ingredients for 4 servings:
- 500 ml milk, 1.5 or 3.5%
- 3 tbsp cocoa powder
- 50 g xylitol (sugar substitute) or erythritol
- 3 tsp, ground locust bean gum

Mix 50 ml of the milk with the cocoa and locust bean gum. Heat the remaining milk and Xucker in a saucepan. Just before cooking, add the blended ingredients to the pan and stir continuously until boiling. Bring to a boil once, then remove from the heat and continue stirring, as usual with puddings. Enjoy the pudding warm or chilled – guilt-free. Locust bean gum is comparable to cornstarch, a thickening agent. However, it is completely carbohydrate-free. Values for the entire pudding with 1.5% milk: 372 kcal, 27.91 g carbohydrates, 14.38 g fat, 24.02 g protein per serving – just 93 calories!
