Lamb's lettuce with raspberries and walnuts

Ingredients for 4 servings:

  • 150 g raspberries (frozen)
  • 150 g lamb’s lettuce
  • 75 g walnut kernels
  • 3 tbsp Balsamic vinegar (raspberry balsamic vinegar)
  • 5 tbsp walnut oil
  • 1 tbsp honey
  • 2 tsp mustard
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Defrost the raspberries in the microwave. Add them to the lamb’s lettuce along with the walnuts. Mix the remaining ingredients into a dressing. Gently toss this dressing into the salad. Serve immediately.
