Ingredients for 4 servings:
- 3 m.-sized eggs
- 125 g low-fat curd cheese
- 100 g flour
- 100 ml milk (1.5% fat)
- 30 g sugar
- 1 tsp butter
- Powdered sugar for dusting
- possibly cinnamon powder
- 1 pinch of salt
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
A light and fluffy version of the classic – great with applesauce!
Preheat the oven to 180°C (fan oven, top/bottom heat: 200°C). Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Now mix the egg yolks with the flour, quark, milk, and sugar. Carefully fold in the beaten egg whites until fluffy. Melt the butter in a large, non-stick, ovenproof pan, pour in the batter, and smooth it down. Reduce the heat to medium and bake the Quarkschmarren for 3 minutes (do not turn!). Then return the pan to the oven for about 12 minutes. Once the baking time is over, remove the pan and tear the batter into pieces with a spatula. Sprinkle with powdered sugar and cinnamon, if desired; it goes great with all kinds of fruit compote!
