Tomato – zucchini – carrot – sauce

Ingredients for 4 servings:

  • 1 onion(s)
  • 3 garlic cloves
  • 6 tomatoes
  • 2 zucchini (approx. 250 g)
  • 3 carrots
  • 300 ml water
  • 1 tbsp vegetable broth, instant
  • herbs, Italian
  • possibly sauce thickener
  • 1 tbsp olive oil
  • 2 tbsp tomato paste

Working time approx. 15 minutes; Total time approx. 15 minutes

Chop the onion into not-too-fine cubes. Crush the garlic. Dice the remaining vegetables. Sauté the onion and garlic over medium heat. Add the carrots and zucchini when the onions are translucent, and fry everything for a few more minutes. Now add the tomatoes and tomato paste. Simmer for another 5 minutes. Now add the water and vegetable stock, and simmer everything for about 20 minutes (until the carrots are soft). You can now consider puréeing the sauce—it will then have an orange color, however. If you leave it as is, thicken it with a little sauce thickener. Add a few Italian herbs, and you have a delicious tomato sauce that goes very well with pasta.
