Ingredients for 1 servings:
- 2 bananas, medium ripe, sliced
- some peanut butter, almond butter or cashew butter
- 1 bar of dark chocolate, 80% min.
- 2 tsp coconut oil, cold-pressed
- some peanuts, almonds, cashews, chopped, optional
Instructions
Working time approx. 10 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 10 minutes

Line a baking sheet with parchment paper. Peel the bananas and cut them into approximately 1 cm wide slices. Spread some peanut butter (or another type of butter) on each slice. Stack two banana slices on top of each other like a sandwich. Refrigerate the slices for about 1 hour. Melt the dark chocolate and coconut oil in a bowl over a pan of simmering water until creamy (the water should not be boiling and the bowl should not be sitting in the water). Dip each “banana sandwich” into the melted chocolate with a spoon, return it to the parchment paper, and sprinkle with chopped peanuts. Refrigerate the banana bites for about 3 hours and enjoy as you go.
