Pancakes sweetened with apple syrup

Ingredients for 1 servings:

  • 250 g flour
  • 1 tsp baking soda
  • 320 ml buttermilk
  • 1 tbsp apple syrup
  • 1 egg(s)
  • 2 tbsp rapeseed oil or melted butter
  • some oil for frying
  • possibly fruit and yogurt, optional
  • extra apple syrup

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

No sugar, suitable for Baby Led Weaning (BLW), makes 18 small pancakes

In a large bowl, combine the flour and baking soda. Add the buttermilk, apple syrup, egg, and oil or butter and mix well for at least 2 minutes. Heat a pan with a little oil. Drop the batter into the pan, a tablespoon at a time, and gently fry the pancakes on both sides. Caution: The pan should not be too hot. Serve with a drizzle of apple syrup, and optionally with fresh fruit and a dollop of yogurt.
