Ingredients for 1 servings:
- 100 g ground almonds
- 50 g oil (walnut), alternatively butter
- 2 eggs
- 400 g apples
- 3 tsp sweetener, liquid
- ½ tsp cinnamon
- ½ pack of baking powder, sifted
- lemon juice
Instructions
Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Mix together ground almonds, oil, and eggs. Season with sweetener and cinnamon to taste. It can be a little sweeter than you like; the sweetness will fade slightly during baking. Set the mixture aside for about 20 minutes; it will thicken slightly. In the meantime, wash and peel the apples, then dice them into small pieces and drizzle with a little lemon juice. Mix the apple pieces with the batter. Finally, add the baking powder through a sieve and mix thoroughly. Fill into 6 muffin tins (I use silicone ones; others may need a little grease). Bake in a preheated oven at 160°C for about 22-25 minutes.
