Baked apple filled with cranberry compote and hazelnuts

Ingredients for 2 servings:

  • 2 large apples
  • 40 g hazelnuts, chopped
  • 2 tbsp cranberry compote
  • 100 ml cream
  • 2 tbsp vanilla sugar
  • some butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour

Preheat the oven to 180°C (top/bottom heat) and butter a baking dish. Mix together the nuts, cranberry compote, and 1 tablespoon of cream. Sweeten the remaining cream with vanilla sugar to taste. Wash and dry the apples, core them, and hollow them out large enough to fit the filling. Score the skin vertically all the way around. Spoon the filling into the apples and place a small knob of butter on top. Place the apples in the buttered dish. Bake in the preheated oven on the middle rack for about 40-50 minutes. Pour in the cream about 15 minutes before the end of the cooking time. As always, the cooking time depends on the baking properties of your oven and the size of the apples.
