Ingredients for 2 servings:
- 2 cod fillets
- 1 bell pepper(s), red
- 1 bell pepper(s), yellow
- 1 onion(s), peeled, diced
- 2 garlic cloves, peeled, finely diced
- some olive oil
- 1 can tomato(s), chopped, EW 400 g
- salt and pepper
- Sugar
- Paprika powder, sweet
- chili flakes
- 30 ml white wine
- 1 tbsp flat-leaf parsley
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Clean the peppers and cut into strips. Heat the olive oil, sauté the peppers and onions over medium heat for three minutes, stirring occasionally. Add the garlic and sauté briefly. Add the tomatoes, white wine, and spices, cover, and cook for five minutes. Season to taste. Rinse the cod fillets, pat dry, and season with salt and pepper. Add to the vegetables and cook the fish, covered, over low heat for five to ten minutes, depending on its thickness. Serve sprinkled with chopped parsley.
