Ingredients for 6 servings:
- 2 onions
- 4 tbsp olive oil or ghee
- ½ celery root, sliced or grated
- 1 bell pepper(s), finely chopped
- 2 handfuls of fresh mushrooms, sliced
- 2 garlic cloves, chopped
- 250 g tomatoes, fresh
- 1 pack of tomatoes, pureed, approx. 500 ml
- 1 can of tomato paste, approx. 80 g
- 1 tsp oregano, dried
- 1 ½ tsp basil, dried
- 1 tsp thyme, dried
- 1 bay leaf
- Salt and pepper to taste
- 500 g whole wheat pasta

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Sauté onions in oil, then add celery, bell peppers, mushrooms, and garlic, and sauté for 5 minutes. Add fresh crushed tomatoes and tomato paste. Add spices and cook until the vegetables are tender. Cook pasta according to package instructions. Remove the bay leaf and serve.
