Ingredients for 1 servings:
- 200 g ground flaxseed
- 60 g wheat gluten
- 60 g psyllium husks
- 1 packet of baking powder
- 2 tsp salt
- ½ tsp xylitol (sugar substitute)
- 4 m.-sized eggs
- 2 egg whites
- 400 ml water, hot
- Chia seeds or other grains

First, mix the dry ingredients thoroughly, then add the whole eggs and the additional egg whites using a hand mixer (dough hook), followed by the hot water, a little at a time. Let the dough rest for about 5 minutes, then shape into a loaf that isn’t too high. You can sprinkle a little spelt flour on top for a nice look. Place on a baking tray and bake at 180 degrees fan-assisted oven or 200 degrees top/bottom heat for about 50 minutes. Rolls should be baked for about 35 minutes. Test for doneness with a wooden skewer. If some remains, bake for a little longer. Note from Chefkoch.de: Because flaxseed contains a relatively high cadmium content, the German Federal Center for Nutrition recommends no more than 20g of flaxseed per day. Your daily bread consumption should be adjusted accordingly.
