Spicy carrot salad

Ingredients for 2 servings:

  • 300 g carrot(s)
  • 1 spring onion(s)
  • ¼ bell pepper(s), red
  • 1 tbsp poppy seeds
  • 1 tbsp parsley, chopped
  • 1 tbsp orange juice
  • 2 tbsp balsamic vinegar, lighter
  • 1 tbsp oil
  • 1 pinch of salt
  • some pepper, freshly ground
  • 1 tsp, levelled sugar
  • 1 garlic clove(s), squeezed

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Combine the dressing ingredients thoroughly or mix in a shaker. Peel and finely grate the carrots. Finely slice the spring onion, dice the bell pepper, and chop the parsley. Combine all ingredients in a bowl and mix. Add the dressing and mix well. Refrigerate for about 1 hour before serving, stirring occasionally and seasoning to taste.
