Muffins with banana, apple and carrot – low calorie

Ingredients for 1 servings:

  • 150 g spelt flour or wheat flour
  • 1 tbsp, levelled cocoa powder
  • ½ pack of baking powder
  • 1 pinch of salt
  • 30 g brown sugar
  • 1 tbsp honey
  • possibly stevia or sweetener
  • 1 small banana(s), ripe
  • 1 small apple
  • 1 small carrot(s)
  • 180 g low-fat curd cheese
  • 20 ml vegetable oil
  • 1 small egg(s)
  • 1 packet of vanilla sugar
  • 3 tbsp milk

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Makes 12 muffins – suitable for WW, 1 muffin = 2 PP

Finely grate the apple and carrot, mash the banana, and mix everything together with all the other ingredients. The batter should be fairly firm, but not too runny, as it will stick. Pour into muffin tins; this makes 12. If you’re not using paper or silicone baking cups, grease the pan well. Bake for approximately 25 minutes in a preheated oven at 180°C (top/bottom heat), depending on your oven type, then let cool. The muffins taste best the next day.
