  • 120 g sheep’s cheese, pickled in brine
  • Olive oil, plenty
  • ½ lemon(s), juice
  • Sea salt and pepper, freshly ground black
  • Oregano, ground

Shred the red cabbage into medium-thin strips. Cut the feta cheese into small cubes. Lightly salt the shredded red cabbage, add oil, and let it simmer for a while. Stir in the cheese and finely sliced ​​spring onions. Season with lemon juice and seasonings and let the salad marinate in the refrigerator for 30 minutes. Season again before serving.
