Thick waffles

Ingredients for 4 servings:

  • 200 g potato starch
  • 200 g flour, smooth
  • 250 g sugar
  • 2 packets of vanilla sugar
  • 200 g margarine, melted
  • 1 tsp baking powder
  • 5 eggs
  • 1 pinch of salt
  • possibly cinnamon
  • possibly whipped cream
  • possibly chocolate sauce
  • possibly powdered sugar
  • some oil for the waffle iron

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Beat the eggs with sugar, vanilla sugar, and salt until frothy and the sugar is completely dissolved. Combine the cornstarch and flour with the baking powder and, if desired, 1/4 teaspoon of cinnamon. Stir the flour mixture into the egg-sugar mixture and add the melted, cooled butter. Mix well, adding a little water until the batter has the consistency of very thick pancake batter. Let it rest at room temperature for 15 minutes. Preheat the waffle iron (Brussels waffle iron) and brush with neutral oil. Bake the waffles until light brown, then place them side by side on a wire rack to cool so they don’t get soggy. Serve warm with whipped cream, chocolate sauce, or powdered sugar.
