Crispy sweet potato fries

Ingredients for 1 servings:

  • 1 large sweet potato(s)
  • 1 tbsp cornstarch
  • 2 tsp allspice
  • 1 egg white
  • olive oil
  • Salt

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 50 minutes

Super crispy from the oven!

Peel the sweet potato and cut into fine, even sticks. Fill a bowl with water and place the raw sticks in it for 1-2 hours (or longer if you prefer). Drain well and pat dry. Mix the cornstarch and Pimentón de la Vera, place in a freezer bag, and add the dry sticks. Seal the bag and shake well to ensure all the fries are evenly coated. Set the oven to approximately 210°C (fan). Beat the egg whites with a pinch of salt until stiff peaks form, then stir in the sticks in a large bowl. Line a baking sheet with baking paper and lightly brush with olive oil. Place the strips next to each other on the baking sheet, leaving some space between them, and place in the oven for approximately 15 minutes. Turn once and place back in for another 15 minutes. Finally, transfer the hot fries to a bowl, add salt to taste, and mix well. A great side dish for burgers, for example!
