Ingredients for 1 servings:
- 40 g oat flakes, wholemeal
- 50 ml coconut milk, creamy
- 50 ml low-fat milk
- 100 ml water
- 10 g dark chocolate, 85%
- 1 tsp desiccated coconut
- Liquid sweetener or sugar
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
Oatmeal with coconut
Combine coconut milk, milk, and water in a saucepan. Add the oats and sweetener if desired. Since coconut milk is very sweet, you’ll need only a dash or two of sweetener. Bring to a boil and simmer on low heat for 5-10 minutes, until the desired consistency is reached. Stir well and frequently throughout to prevent burning. Chop or grate the chocolate, mix it with the coconut flakes, and pour over the finished oatmeal.
