Light summer salad with lentils and celery

Ingredients for 4 servings:

  • 250 g lentils, brown
  • 1 small celery
  • 1 apple
  • 100 ml oil
  • 100 ml balsamic vinegar
  • 4 tsp mustard
  • 1 bunch of parsley
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

for fans of crunchy mixed with soft

Cook the lentils according to the package instructions and let them cool. Finely chop the celery, halve the apple, and chop the parsley. Mix everything together. For the dressing, combine olive oil or neutral oil with mustard and balsamic vinegar. Mix everything together and season with salt and pepper. Let it sit in the refrigerator overnight or eat immediately.
