Ingredients for 1 servings:
- 180 g flour
- 200 g sugar
- 25 g cocoa powder (Dutch processed)
- 1 tsp baking soda
- ½ tsp salt
- 230 ml water, cold
- 90 ml avocado oil or other vegetable oil
- 1 tsp lemon juice
- 1 tsp vanilla extract or vanilla sugar
- Fat for the mold
- Chocolate glaze or powdered sugar

Preheat oven to 175 degrees Celsius (350 degrees Fahrenheit). Grease a springform pan. Sift dry ingredients into a bowl and set aside. Combine cold water, oil, lemon juice, and vanilla extract in a cup. Blend the liquid and dry ingredients until there are no lumps and the batter is smooth. Pour into the springform pan and bake for 30-35 minutes, or until a toothpick comes out clean. Let the cake cool and then cover with chocolate glaze or dust with powdered sugar.
