Martin's pork fillet

Ingredients for 4 servings:

  • 1 large pork fillet(s)
  • 200 g grated cheese for topping
  • 150 ml white wine, semi-dry
  • 200 ml broth
  • 1 tbsp mustard
  • 100 g ham, raw
  • 1 handful of breadcrumbs
  • Salt and pepper, freshly ground
  • vegetable oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

baked, without cream

Wash and trim the pork fillet, and cut into finger-thick slices. Season both sides with salt and pepper, then coat in breadcrumbs. Heat the vegetable oil in a pan, fry the breaded fillet pieces until light brown on both sides, and then place them in a baking dish. Add the stock, white wine, and mustard to the still-hot pan and whisk. Pour the liquid into the baking dish. Arrange the ham evenly on top of each fillet piece. Sprinkle with cheese. Bake in a preheated oven at 200°C (top/bottom heat) for about 15 minutes. Spätzle (spaetzle) and a fresh salad go well with the dish. A glass of white wine also goes well with the dish.
