Ingredients for 4 servings:
- 1 small head of celery
- 600 g carrot(s)
- vegetable broth
- salt and pepper
- 100 g crème fraîche
- Parsley
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel and dice the celery. Peel and slice the carrots. Sauté the vegetables in a little water. Add vegetable stock, salt, and pepper to taste, and simmer for about 20 minutes. Test for tenderness and mash the vegetables with a potato masher when tender. Stir in the crème fraîche and chopped parsley.
