Feta with egg and tomatoes on toast

Ingredients for 5 servings:

  • 1 egg(s)
  • 2 tomatoes
  • 50 g parsley
  • 1 tsp mint
  • 200 g feta cheese
  • 10 slice(s) of toast, also whole grain toast
  • 1 tsp paprika powder (mild or hot)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Breakfast mix in the oven

Wash the tomatoes, then cut them into small cubes. Finely chop the parsley and crumble the feta. Stir the mint, paprika, and egg in a bowl with a fork. Arrange the toasted bread on an oven rack and spread a tablespoon of the feta mixture on each piece. Preheat oven to 200°C (400°F) and bake for about 15-20 minutes, until the toasted bread is slightly crispy. Serve for breakfast or with salad in the evening.
