Cucumber salad in jalapeño yogurt sauce

Ingredients for 4 servings:

  • 1 cucumber(s) (salad cucumber, field cucumber)
  • ½ m.-sized onion(s)
  • 1 garlic clove(s)
  • 200 g natural yogurt
  • 5 tbsp Jalapeño(s), sliced, from the jar
  • 5 tbsp vinegar, from the jalapeno jar
  • 5 green olives from the jar
  • 1 tbsp, strained mustard, medium hot
  • 1 tbsp, leveled tomato paste
  • 1 tbsp, levelled honey, liquid
  • 1 tsp salt
  • some black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

vegetarian, nice and spicy

Peel the cucumber and slice it with a mandoline. Season with salt, stir, and let it sit for at least 30 minutes to release the juice. Meanwhile, combine the yogurt with the spicy jalapeño vinegar, jalapeños, mustard, honey, tomato paste, and pepper in a bowl. Finely chop the olives, onion, and garlic and add them. Squeeze the cucumber slices with your hand and stir them into the yogurt dressing. Season to taste. You can add other ingredients to this salad. For example, I added half a can of corn, half a diced red bell pepper, and two chopped tomatoes to the cucumber salad.
