Fried tomatoes with onion rings on farmhouse bread with fried eggs

Ingredients for 4 servings:

  • 2 m.-sized onion(s)
  • 8 large tomatoes
  • 1 bunch of chives
  • 6 tbsp olive oil
  • 8 m.-sized eggs
  • 8 slices of farmhouse bread
  • 2 tbsp butter
  • some salt
  • some pepper, mixed, from the mill

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Vegetarian

Peel the onions and slice into thin rings. Rinse the tomatoes and slice them, removing the stems. Rinse the chives, shake them dry, and finely chop them. Heat 2 tablespoons of olive oil in a pan and fry the onion rings until they are translucent and lightly golden brown, then remove them. Heat another 2 tablespoons of olive oil in the pan and fry the tomato slices. Heat 2 tablespoons of olive oil in a non-stick pan and fry the eggs. Briefly toast the slices of farmhouse bread in a toaster or in the oven, then brush them with butter and top with the tomato slices, then add the onion rings and finally the fried eggs. Season with salt and a few turns of freshly ground pepper and serve sprinkled with the chives.
