Ingredients for 2 servings:
- 125 ml water or soy milk
- 125 ml mineral water
- 125 g flour
- 1 pinch of salt
- 2 tbsp sugar
- ½ tbsp margarine

Mix the soy milk or tap water with the mineral water. Combine the flour, salt, sugar, and margarine in a bowl, then add the water. Mix everything well. Let the pancake batter stand for 5-10 minutes. In the meantime, heat the pan, adding a little oil or margarine as needed. Once the pan is hot, carefully pour in the batter with a ladle. Fry on both sides until golden brown—and you’re done. Tip: Banana pancakes: Cut a banana into small slices and place on the wet side of the pancake while the other side is still cooking. While the pancake is still warm, sprinkle some dark chocolate on top. I like to eat them with jam, maple syrup, beetroot syrup, or cinnamon and sugar.
