Fried bananas and nectarines

Ingredients for 6 servings:

  • 6 bananas
  • 6 nectarines
  • 100 g wheat flour
  • 100 g breadcrumbs
  • 375 ml beer (pilsner)
  • 2 tbsp sugar
  • 1 tsp, leveled salt

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

Mix together the flour, breadcrumbs, salt, and sugar. While stirring constantly with a hand mixer, add enough beer until the batter has a slightly runny consistency. Let the batter rest in the refrigerator for 30 minutes. Peel the bananas and nectarines and cut into large pieces. Then stir the batter again and add a little more sparkling mineral water, if desired. Add the bananas and nectarines to the batter. Preheat the deep fryer to 180°C and fry the fruit in batches, stirring constantly, until the pieces are golden brown—about 3 minutes. Drain on kitchen paper, garnish with honey or vanilla ice cream, and serve.
