Potato and bean stew with Danube Swabians

Ingredients for 2 servings:

  • 2 bratwursts (Danube Swabians) or other paprika sausages
  • 1 onion(s)
  • 400 g potatoes
  • salt and pepper
  • 1 tsp paprika powder
  • 450 ml vegetable stock
  • 3 stalks of savory
  • 250 g green beans
  • 150 g tomatoes
  • 1 tbsp tomato paste
  • 1 tbsp rapeseed oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel and finely dice the onion. Slice the sausages and dice the potatoes. Heat the oil in a pan and fry the onion. Add the tomato paste and sauté. Add the potatoes and sausages. Season with salt, pepper, and paprika. Pour in the broth. Wash and trim the beans and add them. Add the savory. Cook for about 20 minutes. Remove the savory at the end. Wash the tomatoes, dice them, fold them in, and heat briefly. Serve in soup bowls. Donauschwaben (Danube Swabian sausages) are spicy paprika sausages.
