Apple-mango jelly with lime

Ingredients for 1 servings:

  • 1 ½ liters of apple juice, preferably home-made
  • 2 mango(s), preferably those “for immediate consumption”
  • 1 lemon(s), the juice
  • 1 shot of lime(s), the juice
  • 1,000 g gelling sugar, 2:1

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 4 minutes; Total time approx. 1 hour 34 minutes

Peel and juice the apples. Peel the mangos and dice the flesh. Simmer the mangos for about 15 minutes at medium heat. Then puree the mango mixture. Combine the puree with the apple juice, lemon juice, lime juice, and preserving sugar in a large saucepan. Boil everything for 4 minutes until bubbling. Test for set. If it’s OK, pour the jam into clean jars. Seal the jars and turn them upside down for 5 minutes. Label them if desired and decorate with a napkin and raffia. Variation: Add a dash of apple liqueur instead of the lime juice.
