Salads: Chicken Salad Made from Duck Meat

  • 150 g Poultry meat (here duck)
  • 100 g Brussels sprouts fresh (rest)
  • 1 piece Orange small
  • 2 tablespoon Yogurt
  • 1 tablespoon Extra virgin olive oil
  • 1 teaspoon Balsamic vinegar dark
  • 1 teaspoon Sugar
  • 1 Knife point Pepper from the grinder
  • 2 Knife tips Salt
  1. Clean the Brussels sprouts and cook them in a little water – here with grained vegetable stock – until soft.
  2. Peel the orange so that no white skin can be seen and cut out the fillets with a sharp knife. Cut these into small pieces. Drink the juice.
  3. Dice the poultry and quarter the cooked Brussels sprouts. Place in a bowl with the orange pieces.
  4. Make a dressing out of yogurt, oil, vinegar, sugar, salt and pepper and carefully fold it into the salad. Let it sit for about an hour. Then season to taste again with salt and pepper.
  5. Pour the salad into a small bowl, garnish with some greens and an orange fillet and serve with baguette or white bread.
