Ingredients for 1 servings:
- 250 g Skyr or low-fat quark
- 1 m.-sized egg(s)
- 50 g coconut flour
- 20 g spelt bran
- some raspberries or fruit of your choice, frozen or fresh
- 20 g chia seeds
- 2 tsp psyllium husks
- 1 tsp baking powder
- n. B. Sweeteners, e.g. erythritol (sugar substitute) or Flavdrops vanilla
- e.g. chocolate drops, sugar-free or nuts

Mix the quark with the egg, sweetener, and raspberries. Add the chia seeds, baking powder, and the other ingredients and knead using the dough hook on a food processor or hand mixer. The dough is easy to work with by hand. Form 25 small balls from the mixture. Place these on a baking sheet lined with baking paper. Decorate with sugar-free chocolate drops and nuts. Bake the cookies on the middle rack of a preheated oven at 180°C (top/bottom heat) for about 20 minutes. They will brown quickly, so be careful. After baking, let them cool completely; then they can be easily removed from the baking paper. A filling snack to satisfy your sweet tooth without the guilt.
