Ingredients for 1 servings:

  • 1 kg flour (type 405)
  • 1 cup milk, small cup
  • 1 tsp sugar
  • 1 cube of yeast, fresh
  • 2 bags of raisins
  • ½ liter of milk
  • 200 g quark
  • 200 g butter
  • 3 tsp, leveled salt
  • 100 g sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 50 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 2 hours 15 minutes

Put the flour in a large bowl and make a well in the middle. Mix the yeast and sugar with the cup of milk until the yeast has dissolved, then pour it into the well and stir in some of the flour to form a starter dough. Let it rise in a warm place for at least 20 minutes. In the meantime, wash the raisins and drain them. Gently heat the milk, quark, butter, salt, and sugar in a saucepan until the butter has melted. Let it cool slightly. Now add the raisins to the starter dough and stir them in. Then stir in the still lukewarm butter and quark mixture until a nice batter has formed. Now pour the dough into a large baking pan and let it rise for another 30 minutes. Bake at 180°C for about 75 minutes.
