Small Quark Stollen

The perfect small quark stollen recipe with a picture and simple step-by-step instructions.

  • 250 g Flour
  • 1 tsp Baking powder
  • 2 tsp Homemade mint liqueur, see my KB
  • 2 Tl Ginger bread spice
  • 1 piece Egg size L.
  • 125 g Quark 40%
  • 60 g Soft butter
  • 25 g Raisins
  • 100 g Ground hazelnuts
  • 1 packet Chopped pistachios
  • 1 Pck. Chocolate Icing
  • 100 g Sugar
  • 1 tsp Homemade vanilla sugar
  1. I tested the idea with the mint liqueur beforehand at a mini test gallery. Tasted really good. If you don’t like the chocolate icing, you can dust the stollen with powdered sugar.
  2. Work the flour, baking powder, sugar, vanilla sugar, mint liqueur, gingerbread spice, egg, butter and quark into a kneading dough.
  3. Gradually knead in the remaining ingredients. If the dough sticks, chill it for a moment.
  4. Fill the dough into a small loaf pan and bake in the preheated electric oven at 175 Gtad top / bottom heat on the bottom rack for about 30 minutes (depending on the oven).
  5. Brush the cooled stollen with the chocolate icing or dust with powdered sugar. Stop as you like it best.
