Ingredients for 4 servings:

  • 1 kg berries of your choice (strawberries, raspberries, blueberries…, frozen)
  • 650 g glucose
  • 3 tsp vanilla flavor
  • 1 pack of gelling agent (2:1)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 18 minutes

low in fructose

First, thoroughly puree the fruit with a hand blender and add the glucose, vanilla flavoring, and gelling agent. Then pour the pureed mixture into a saucepan and boil for about 3 minutes (follow the gelling agent instructions). While still hot, pour the jam into jars and cover. If you have severe fructose intolerance, you should use raspberries or blueberries instead of strawberries, as these are usually easier to digest. Depending on your taste, you may need to add a little more glucose (or sweetener), as these berries are not as sweet as strawberries.
