Ingredients for 1 servings:

  • 1.3 kg Mirabelle plums, prepared and weighed
  • 300 ml gin
  • 1 small vanilla pod(s)
  • 500 g gelling sugar 3:1

Halve the vanilla pod and mix with the prepared mirabelle plums, the gelling sugar, and 100 ml of gin. Cover and let it draw its juice for several hours. Then bring to a boil in a sufficiently large saucepan and simmer gently for 4 minutes. Shortly before the end of the cooking time, stir in the remaining gin. Pour the finished jam into prepared twist-off jars and let it cool upright with the lids on.
