Exotic coconut fruit jam

Ingredients for 4 servings:

  • 1 kg fruits, exotic, mixed, frozen
  • 500 g gelling sugar 2:1
  • 250 g coconut flakes

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 35 minutes

delicious spread

Mix the fruit with the gelling sugar and let it thaw for about 1 hour. Add the coconut flakes, blend everything until smooth, and bring to a boil slowly, stirring constantly. Simmer for about 5 minutes and then test for settling. Pour everything into clean twist-off jars and turn them upside down for 5 minutes. The jam will keep for up to a year when stored in its sealed container and is not only delicious as a spread, but also a great addition to sauces and salad dressings.
